Recipe of the Week, 6/22/19

When beginning any sort of fitness journey, the hardest part for most is giving up all the delicious food. That honestly isn't the case. If you are creative enough, willing to put some time in on Pinterest, and open to try new things then adapting to a new cleaner diet will be easy. The recipe I'm sharing with you today, Spaghetti Squash with ground turkey and marinara sauce, is extremely easy, low carb, and delicious. I made my own marinara sauce simply because a lot of the store bought sauces have added sugars and high sodium. If you want to use a store bought sauce that's fine but be sure to read the nutrition label.

Spaghetti Squash with Ground Turkey and Marinara:

(serves approximately 4)

1-Spaghetti Squash

1-16oz package of ground turkey

6-cloves of garlic

2- TBSP of olive oil

1- 8 oz can of tomato sauce

1- 8oz can of diced tomatoes with Italian season

2- TBSP Mrs. Dash Table Blend Seasoning (no salt) divided


1- Preheat oven to 400 degrees

2- Wash squash, cut in half, and scoop out the seeds. Drizzle 1 TBSP of olive oil on each half, sprinkle 1 TBSP Mrs. Dash on both halves. Clean skin off of garlic cloves and place 3 in each half of the squash. Place squash in the oven and bake for 50-60 minutes, until fork tender.

3- While squash is cooking, brown ground turkey in a skillet. Set aside when cooked.

4- In a sauce pan, combine the can of tomato sauce and the can of diced tomatoes. Add 1 TBSP of Mrs. Dash. Place sauce on simmer until squash comes out of the oven.

5- When the squash is fork tender, take it out of the oven, and let it cool for 10 minutes. While it's cooling, take the roasted garlic cloves, smash them with a fork, and add to your tomato sauce.

6- Take a fork to the cooled squash and drag it back and forth. The squash will pull away and look like spaghetti noddles. Plate squash with ground turkey, top with sauce, and enjoy!
